Apple, Celery, Radish Salad with Goat’s Cheese

  1. Cut the apples in half and remove the cores. Slice them thin, place in a bowl and coat with lemon juice to prevent discolouration
  2. Slice the celery down the stick into thin slices, reserve the leaves. Top and tail the radishes and slice into thin rounds. Add to the apple slices
  3. Dress the vegetables with the rest of the lemon juice, the olive oil and salt and pepper
  4. Arrange the salad on a serving plate, crumble over the goat’s cheese and garnish with parsley and celery leaves
