Kid Goat Rack with Aronia Jus

Instructions
  1. Pre-heat the oven to 200°C and put a frying pan or griddle on a high heat ready for the rack
  2. Season the kid rack with salt and pepper on both sides and seal it in the pan with a little olive oil on all sides. Then move the rack to an oven tray and put in the oven to finish cooking
  3. Next deglaze the pan by adding a splash of red wine and scraping any residue from the bottom. Then add the stock and aronia juice and start to reduce the sauce on a high heat
  4. Next prepare the kurly kale by removing the stalks from the middle of the leaves. Place the kale in a tray, add a little olive oil and season with salt and pepper
  5. Check the kid rack and when it is nearly done to your liking add the kale to the oven
  6. After about five minutes, when the kale has gone nice and crispy and the rack is done, remove them both from the oven. Lay the kale on kitchen paper and rest the rack for five minutes
  7. When the sauce is reduced so that it coats the back of a spoon, add the aronia berries and adjust the seasoning so that the sweet, tart and salt are all balanced
  8. Slice the rack between the bones across the loin and serve on the kale with the jus drizzled on top

I served this with some crushed new potatoes but add whatever carbs you fancy or none if you prefer
