  1. First slice the neck into long strips, about 1/2 cm thick. It is easiest to do this if you put the meat in the freezer for an hour to firm it up first
  2. Mix the rest of the ingredients in a bowl
  3. I vac-packed the meat in the marinade to help the flavours penetrate but you can put everything in a bowl, just make sure the meat is fully covered by the marinade. Cover with clingfilm and refrigerate overnight.
  4. Remove the meat from the marinade. You could keep the marinade for a great BBQ sauce, just make sure to bring it to the boil to make it safe.
  5. Lay the strips out on paper towels and pat them dry
  6. Lay three strips in the centre of a microwaveable plate. Microwave on half power for 1 minute
  7. Turn the strips over and microwave for another minute. Repeat three more times until the jerky is firm and dry
  8. Leave it for a few minutes to cool and dry a little further and enjoy
Recipe Notes

Since microwaves have different wattage and quite vague settings, half power is not very clear. I used the lowest setting before ‘defrost’ and the jerky turned out nicely. Be careful not to take it too far, the jerky will dry a little more after it comes out so err on the side of caution. If it needs a little longer give it 30 second blasts until it has dried.
